ABC Melt: The BLT of Fall
Like Summer tomatoes, apples are certainly the star of Fall and deserve to be celebrated in savory ways as well as sweet. This sandwich is something I look forward to making throughout the season every year. Crisp apple slices, salty bacon, and sharp cheddar are a match made in pumpkin spice heaven. Then, we ramp it up with caramelized onions and a maple Dijon aioli. There’s something nostalgic about it that I can’t really put my finger on, but it keeps me coming back to it every year. I know it’s a lot to ask of you to make caramelized onions for a sandwich, but they really do take it to a whole new level. I recommend just making a big batch at once so you can justify stirring a pan of onions for an hour.
ABC Melt:
Green Apple thinly sliced
Cooked Bacon Strips
White Cheddar sliced or shredded
Caramelized Onions (2-4 onions, sliced)
Wheat bread or sourdough
Aioli:
1/4 c mayo
1-2 tbsp dijon mustard
2 tbsp maple syrup
1 small garlic clove optional
1/2 tsp lemon juice
Make the aioli by grated the garlic clove if using into a small bowl before mixing together the remaining ingredients and a pinch of salt
Caramelize your onions by heating 2 tbsp of oil in a large heavy bottomed skillet over medium heat. Add the sliced onions and sauté until they start to soften and turn translucent, about 5 minutes.
Add a pinch of salt and reduce heat to medium low and cook for 45-60 minutes, stirring occasionally. Add a splash of water if your pan starts to dry out. If the onions start to stick to the pan, lower the heat. You’re looking for a caramelized golden brown color when they’re finished.
Assemble the sandwich by spreading aioli on both pieces of bread. Layer the onions, sliced apple, cheese, and bacon. I add another drizzle of maple syrup to make it a touch sweeter. Grill sandwich in a pan with butter over medium heat until cheese is melted.
